There are a few new coupons to print and more coming this week!  And in the meantime, I am going to figure out what to do with the 30 pounds of zucchini my garden produced seemingly overnight!

I made zucchini pineapple bread last week…I usually make an assortment of breads and sometimes a cake. Breads freeze well. I’m also looking to make a zucchini salad with feta cheese. In the past I’ve made freezer meals with chicken, zucchini, carrots and potatoes. Someone also told me they like to add finely grated zucchini to pancake, but I haven’t tried that. Then again… 30 pounds…that’s almost what my 4 year old weighs. Might be a good time to be generous with friends and family.

Excellent ideas! And I’ve already tried to give away some zucchini, but everyone seems to be in the same boat! Too much food is a good problem to have, though!
