Fish tacos. Just the combination of those two words seems funny to me as a northern Minnesota gal. Sure, fish is a regular staple up here in the land of 10,000 lakes. And while we eat tacos, that’s about as wild as it gets around here.
But fish and tacos together? Turns out fish tacos are pretty good! We recently got a chance to create our own fish tacos thanks to Gorton’s and Ortega.
- 1 box of Ortega Whole Grain Corn Taco Shells
- 2 packages of Gorton’s Grilled Tilapia filets
- 1 avocado, sliced
- 2 chopped tomatoes
- 4 oz of Ortega chopped green chiles
- Ortega taco sauce
I just followed the directions on the packages and was able to pull this meal together in less than 20 minutes (with a couple of sides). My kiddos (who are the world’s pickiest eaters) mainly worked over the taco shells and fixin’s, but that’s pretty standard behavior for them, even with regular tacos. But my hubby and I did enjoy the fish tacos and thought they were a nice change of pace from the regular ol’ beef ones we usually make. In the future when I make these, I think I’ll add a little bit of my favorite Black Bean and Corn Salsa to spice things up a bit more or I’ll check out the other recipes from Gorton’s and Ortega.
This isn’t the most frugal meal you’ll make, but if a quick convenience meal like this keeps you from hitting the drive-thru, it’s well worth it! Just remember to keep an eye out for those coupons to make this meal a quick go-to on busy nights.
